Halls Family Dairy is for people who understand that great cheese begins long before the vat. It starts with content cows, healthy feed, and milk managed with respect.
Our dairy exists to protect a way of life built on care, hard work, and respect for the land, while producing cheese that tells the truth about where it comes from.
Fifi and Suzette are made using the milk from our cherished herd of pure-bred Normande cows. High in butterfat and full of character, their milk is perfectly suited to traditional French style cheesemaking.
We create our cheeses thoughtfully with outstanding ingredients.
SUZETTE
WASHED-RIND | PONT-L’ÉVÊQUE STYLE
Suzette is named after one of our beautiful cows and is a washed-rind cheese made in the style of Pont-l’Évêque, using traditional French methods and our own Normande milk.
Suzette changes with time and season.
Young, she is firm and chalky. With age, she becomes soft, savoury, and yielding. Each block is handmade and no two will ever be exactly the same.

FIFI
CAMEMBERT STYLE
Fifi is a gentle, quietly confident cheese.
Soft, milky, and balanced, she’s made to be shared.
Using the same single-origin milk, Fifi reflects the season, the pasture, and the care taken at every step. Simple on the surface. Thoughtful underneath.

Normande Cow Profiles
At Halls Family Dairy, everything begins with our beloved Normande cattle. Our Normande girls aren’t background to the story. They are the story.
They are not just dairy cows, they are the heart of our farm, the soul of our cheeses, and the reason our story exists at all.
Each of our Normande girls carries centuries of French dairy tradition in her genetics — known for milk rich in butterfat and protein, perfect for crafting beautiful, character-filled cheeses. But what makes them truly special to us goes far beyond composition charts and production figures.
They each have their own personality, temperament and their own special place within the herd.
Some are bold and curious, some are gentle and reserved and all of them are deeply valued, much respected and known by name.
When you taste our cheese, you are tasting the work of these remarkable animals — their care, their calm, their quiet daily rhythm. Our role is simply to honour what they give us and transform it with patience and skill.
We thought we would introduce you to some of the team…
And, of course, we must start with the super stars, Suzette and Fifi.
Suzette
Suzette was gentleness personified.
her beautiful silky chestnut coat and the softest, kindest eyes you could imagine.
By nature she was calm and even a little timid. She would quietly wait her turn, watching with those thoughtful eyes. Her favourite thing in the world was a gentle stroke on her nose.
Suzette reminds us that true strength doesn’t need to be loud. Sometimes it looks like kind eyes and a gentle nudge for one more stroke on the nose.
Fifi
Fifi was impossible to miss.
A proud lady and the only Normande in our herd to carry horns — and she carried them magnificently. They framed her face like a crown, perfectly matching her strong-willed nature. Fifi wasn’t timid, but a natural herd leader. And she absolutely loved a photo.
Many of our favourite farm photographs feature her steady gaze and those magnificent horns, like her photo on the Fifi Camembert front label.
Fifi reminded us that personality matters.
That presence matters. That sometimes the strongest characters are the ones who shape the entire story. 💛
Fifi had two daughters, Fiona and Fleur, who are now part of our milking herd.
